I got the following back from Linda. Hope it helps!

The nail I used measures 0.15 inches is diameter. I have seen people who have made nice viscotesters cutting off the plastic of a squeeze ketchup bottle too.

Thank you for the information. But I am confused. If the diameter of the nail is .15 inches, and assuming the hole the nail created is not much larger, how could the break in the flow of the honey occur so quickly (according to Linda's graph, under 80 seconds )? We are getting such different results. The other problem is that the time the corn syrup takes to break does not seem to fit the graph. We've run these tests so many times and are not coming up with consistent results, nor with a graph that makes much sense.

I can answer this, but you really need to get a copy of the rules and look it up yourself (I want to say it's Section 2). There are several items to bring, so check with the rules and come back with questions.

Rule 2.b. explicitly talks about what you can bring (a 3 ring binder). But more importantly there are a LOT of other details in the rules you need to be aware of before you try to prepare for this (or any event).

This is my first year doing science olympiad, and I have a quick question about preparing for food science. For the standard curve graph do you just calculate the time the liquid can flow out of the viscometer? The information seems a little vague. ;)

You make your viscometer. You then test each of the standards on the rules by putting them through and timing them. Then, make a plot of that versus viscosity, which you can find on the rules, to make your standard curve.

Me and my partner are kind of confused on the whole viscocity tester thing. We've made one and get that you have to make a standard curve graph, but how exactly do you time the liquid? Is break flow time the time it takes for the liquid to completely drain out of the tester or what?

Plus, is there a formula for viscocity?
