Agriscience is a trial event for Division B/C and might not be run at all tournaments. Check with your tournament to see if it will be run.

does anyone know if agriscience at nats requires a handwritten notebook or can we like print out graphs and text to paste in a notebook?

The rules don't say anything about it being completely handwritten. I'd argue they're encouraging you to print out and include pictures/text since they state that you're required to include at least 3 pictures of the competitors working with the plants.
