Several ways to do it, here's how I go about it.
I build up the complete motorstick/tailboom assembly including all motor hangers, prop hanger, horizontal and vertical stabilizers.
Mount the prop and add a rubber band of about flight weight.
Now, find the for-aft balance point.
Locate the wing so that for aft balance point is located at where the instructions say your center of balance should be. If they don't say, there are formulas around, I typically start about 60% or more back from the leading edge when we have big tails.
that will get you close. Test fly to find exact balance point for good flight and adjust with clay. Hopefully you built to just under the max weight, you can use clay to bring the model up to weight and locate it to give you the exact cg you need.
