How would one go about measuring the mass of a Helicopter?

Zero the scale with a cup on top and then proceed to set the Helicopter on top of the cup.

Pretty much!

I actually use a piece of 1x 1 scrap on a scale and place the helicopter with its axis of rotation horizontal on the 1x1. This way,u unlike with the cup, I get where it balances too (more important for ws, but can be good to know).

Ok, thanks. So basically any object that can suspend the rotors high enough?

The only way to make reliably repeatable devices in the flying events is with good jigs and fixtures. When I'm building I typically spend a large amount of time and thought on how to jig up what I'm building. And I have to trade off flexibility with ease of use. Much of the skill and accuracy to build a plane or helicopter actually comes from making good jigs...
I've actually been doing just that. Neither me nor my team has a 3D printer, but an office where someone I know works did. Perhaps you could do something similar.

Are there any helicopter kits you would recommend?

The Freedom Flight kits are, IMO, the best. They come with good materials, as well as detailed instructions. My only problem with them is that the laser cut ribs are quite fragile. Alas, they don't have a kit available that's in spec for this year, and Google is saying that their website has issues, so take that into consideration

Andrew,

Actually, Freedom Flight Models does have kits for this year's Science Olympiad Division C helicopter and Division B Wright Stuff airplane. I ordered for the four high schools that I coach a month ago. Contact them via the email address on their website to get order information and prices.

My bad, I didn't realize that they had models not shown on their website.
