Rarely does a vehicle go in a perfectly straight line. You help it turn a bit more by moving the bearing backward or the other one forward. It does not take much. Alternatively, You can warp the chassis a bit with a controlled tension. This can be touchy as it may pick up a bit more of a warp than you want, so be ready to reduce the tension or add tension on the other side.
You could always have a moveable axle assembly.
Now you have to figure out how much to have it turn because of the different possible distances. Then you need to determine how many degrees to angle the car so that it misses the can but still ends up at the destination point.

Here's what I think he meant 
You can split the vehicle into two parts and put a hinge in the middle using a bolt and wingnut (so it rotates about a plane parallel to the floor). that lets you adjust the arc that the vehicle travels on pretty easily. It was common on some mousetrap cars a while back, to adjust how straight they went.
