There really shouldn't be a lot of food-borne, but apparently there is. Lazy event writers recycling old events, methinks.
Well considering that the food you consume is technically part of your environment, it's not too terribly wrong, although it is super irritating.

I cannot speak for other States, but you will not need info on foodborne illnesses in NY - except perhaps for a few like Giardia that can be passed in many ways, including through food.

What kind of information should I look at for environment factors? Prevention, what it is, how it's caused, etc...?

Basically. I might also study some history, maybe some current events regarding them. For example, they may give you a case study and have you analyze it.
