Lol, I don't even have Master's schools picked out yet, much less PhD. I mean, if you want to have that all figured out, more power to you, but I wouldn't say it's necessary. Also, make sure you're flexible, and don't let yourself be ruled by your lists.

Also, there are a lot more grad schools for engineering than biological anthropology/bioarchaeology so you have more places to look at.
