How much does it matter where on the motor stick the fixed rotor is placed (in the middle/closer to the free rotor, or near the other end with more space between the two rotors)? If that makes sense.
Also, I know I've heard probes are useful, but is a stabilizer necessary?

A stabilizer is helpful. It adds little weight so its definitely beneficial to have it, as it decreases excess wobble (at least as far as ive seen) which results in better times.
General motor stick length is 12", the only thing that matters is that it is long enough so that the winded rubber doesn't get bunched up.
The positioning of the fixed rotor isn't something i've gone into yet, i have mine about 3/5 of the way up the motor stick...i get decent - above average times so im happy, i suppose i should start experimenting with that though...

What kinds of pitch are people using? If you're building "standard" rotors, with two straight spars crossed and offset vertically, how much vertical offset and horizontal crossing are you using (seems like an easier way to quantify pitch)?
As well, is anyone using dihedral?

An electric screw driver? You could use the rpm to time how long it takes to wind it a certain amount of times.

The most expensive winder (it's yellow) is ~$22 + shipping.

My school just bought the Helicopter 2011 Kit from Freedom Flight Models. Does anyone have any experience with this model? What should I expect from it? Any recommended modifications?
