Always always always use colors. If you don't have the right colors to build with, ask the supervisor for the right materials.

For twisting u can use either right hand or left hand spirals, where if you were going up it what hand would be on the banister.

I described wrapping/swirling something around a pencil clockwise or counterclockwise (a good way to get a nice clean curlicue). My partner seemed to understand it fine.

Also don't forget to describe how much distance there is between loops, good units are cm. or (like it says on the wiki) "joints"

No, I mean they purposely give different colors and will tell you that colors don't matter. Maybe it's different in your state, but it has definitely happened in New York.

Do they tell you this before you write, or do they tell the builder only? The sticks should be the same length, so use length if they tell the writer before they write. If the sticks are different lengths.... then it doesn't matter what you write as long as you say stick.

Colors mater in my state, even at the most local level. I'd be careful. Better to list extra information than leave out something crucial.

If they say it doesn't matter, then trust the word of the supervisor... and then go as close as possible to color, to be on the safe side. I've always believed that if the judge doesn't have you strictly follow the rules, you should anyway.

I think it differs with each competition, because I've attended competitions (although not well run) that said colors don't matter, but I've also did ones where color definitely mattered. Ask the supervisor before you start writing.

They tell you before you write. And I think that you are talking about knex, where color specifies length. Mostly I think this happens with legos and stuff.
If you specify a color that the builder doesn't have, it could be very confusing.
