I think that kit is an excellent starting point. It should build simply, and should attain times around 1 minute, maybe more.
The build processes are quite different, as the FFM kit uses carbon fiber spars. But the Laser Cut Planes kit will give you something that builds fast without a lot of fuss, and should fly easily. It will give you experience in building, handling, winding, and most important, keeping flight logs.
The FFM and J&H models are far more fragile and detailed. So Yes, I think the LCP kit will serve you well in getting your program off the ground.

I do not have any experience with the Neo kit, but I am familiar with John's design methods. It should be a simple fast build. It does not include carbon spars like FFM. It has interlocking rib slots in teh spars, which you do not get with carbon.
It should be a fast and effective build. As far as getting build practice for FFM? Probably not a lot of carry-over. Getting winding and flight practice, yes.
