8 gigs- A few songs, a few apps, nothing fancy.
16 gigs- Songs, apps, one or maybe two movies.
32 gigs- Plenty of songs, lots of apps, more than one movie.
64 gigs- No one needs an iPod touch this big. If you have that many songs/movies, than go for the classic iPod.
I beg to differ. some of those really talented jazz musicians (one high-schooler I know) has like 60 gigs of songs. not enough room for him. but I think he uses a different iPod

edit: ROBODUDE. 13 songs??!?!!? wowww.

IT'S iPOD TOUCH!!!! grrrrr

But for normal use, an 8 gig should be fine. If you have a lot of stuff, then get a 16. Not too complicated, really.

I don't see 64 gigs as being too much. I'm not sure what formats Apple allows for (I know they don't play flac), but I'd rip my music to a lossless format if possible, which is going to take up a considerable amount of space. Or at least a higher bitrate. You'll have more than enough space for songs, but throw in video, apps, whatever, the more space the better.

Is the classic iPod still hard drive based? I'd rather have a flash based one - although I'm going on 6 years with a hard drive based one, it seems like a no-brainer to get a flash one nowadays. But they may have switched to flash memory by now, I don't really know.

I happen to find this extremely faulty as i could fit all my 80 movies into a 32 gig itouch

64 gigs is actually fairly decent size for an ipod touch especially if you are using it as your major organizer and stuff in that nature

The 16 gig has been discontinued if you are buying straight from apple
I suggest that you reseach what each size offers
Itouch

EDIT
the 8 gig one now has a few less features than the 32 or 64 gig it all depends on what you want

I have 748 tracks and 57 albums on my 8 gig, if that gives you any idea of how large they are. I can't fit all my music though, so I'll probably upgrade soon.

Recreational apps take up hardly any space. Five pages of apps on my iTouch takes up somewhere between 1-2 gigs. Then i have about 300 songs that take up maybe 2 gigs. 8 gigs is plenty of space unless you listen to a lot of music (could use pandora app for that) or want videos and/or movies on your ipod.
