A lot of things!
Some might include
Marcet's Principle (aka Law of Constant Proportions)
Theory of Continental Drift
Theory of Plate Tectonics
Seafloor Spreading
Darwin's theory of atoll formation
SO MUCH MORE

This is probably my favorite event, but I'm not the most knowledgeable about it. Feel free to ask questions though!

Also, I have a question about the event rotations for this event. Normally, the topics are 2 years, but the glaciers topic for 2019 only happened for 1 year. Did they change it or was that just a random thing soinc did?

It changed. They made DP a 1 year cycle and removed the freshwater and Earthquakes+Volcanoes topic. This means that if this year rotated events like they normally did, DP-Tectonics would be back in.

Tectonics: Plate tectonics & crustal evolution by Condie
Glaciers: Glaciers and Glaciation by Evans and Venn (if that's too expensive, you can use Glaciers by Hambrey and Alean)
Oceanography: Introductory Ocenaorgaphy/Essentials of Ocenaorgaphy by Trujillo and Thurman.

For each rotation, you also might want to read sections of Essentials of Geology by Lutgens and Tarbuck.

Marcet's Principle < Forchhammer's principle any day of the week
Anyways, some more theories / laws or whatever are the Bouma Sequence, Wilson Cycle, Stefan-Boltzmann equation, Boyle's Law, Henry's Law, Paleomagnetism / polar wandering, etc.

I had one textbook that I used extensively, I remember it having the words Oceanography on the front and having the surface ocean on the cover. I think it might be the one you put here but it might not.
