I've actually had milk tea served in a bowl with a spoon before, as if it were a soup. It was at a street food stall in Jingzhou, China, and it was mixed with fruit and grass jelly, but no tapioca. It tasted mild and sweet like any proper milk tea should be, although I think the vendors billed it as some other sort of fare, maybe because it came in a bowl, or maybe because it wasn't actually milk tea but rather something with a similar taste. I've actually been to a shop in Cary (a large town near Chapel Hill) that also sells milk tea in a bowl with spoons, so it definitely happens in the United States as well (I didn't order any tea this time because it was late at night).
